  • 2 medium zucchini, sliced lengthwise
  • 1 tsp dried oregano
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish.
  2. Layer zucchini slices in the baking dish, sprinkling dried oregano over them.
  3. Spread half of the ricotta cheese over the zucchini and top with half of the marinara sauce.
  4. Repeat layering with remaining zucchini, ricotta, and marinara.
  5. Sprinkle shredded mozzarella on top.
  6. Cover with aluminum foil and bake for 25-30 minutes; remove foil and bake an additional 10-15 minutes until golden brown.
  7. Let cool briefly before serving; garnish with fresh basil.
