  • 2 ½ pounds beef stew meat
  • ½ teaspoon black pepper
  • 1/4 cup flour
  • 36 tablespoons olive oil
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • 1 cup apple vinegar
  • 4 cups beef stock
  • 5 medium carrots, chopped
  • 1 pound baby Yukon gold potatoes, halved or quartered
  • 2 bay leaves
  • 1 cup frozen peas

Instructions

  1. Chop vegetables and mince garlic.
  2. In a large skillet, heat olive oil and brown seasoned meat on all sides.
  3. Transfer meat to slow cooker and add all remaining ingredients.
  4. Cook on low for 6–7 hours or high for 3–4 hours until tender.
  5. If desired, thicken with cornstarch mixed with cold water during the last hour of cooking.
