  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 23 tbsp milk (for frosting)

Instructions

  1. Preheat your oven to 350°F. Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla and melted white chocolate.
  4. Gradually mix in dry ingredients alternately with milk until just combined.
  5. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for about 10 minutes before transferring to wire racks.
  6. For the raspberry filling, combine raspberries, sugar, and lemon juice in a saucepan over medium heat until berries break down. Thicken with cornstarch slurry and let cool.
  7. For frosting, whip butter until creamy, gradually mix in powdered sugar, followed by melted white chocolate and enough milk for desired consistency.
