  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. Heat olive oil in a heavy pot over medium-high heat. Brown the beef cubes in batches, seasoning with salt and pepper for about 5-7 minutes.
  2. Remove the beef and sauté onions, garlic, carrots, and celery in the same pot until soft (about 5 minutes).
  3. Stir in tomato paste until combined. Return the beef to the pot and add diced tomatoes, apple vinegar, beef stock, and rosemary. Mix well.
  4. Bring to a gentle simmer, cover with a lid, reduce heat to low, and cook for about 2-3 hours until the beef is tender.
  5. Taste and adjust seasoning as necessary before serving hot.
