Ingredients

  • 1 cup sugar
  • 1 cup water
  • 10 large vegan marshmallows
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan over low-medium heat, combine water and sugar. Stir until fully dissolved.
  2. Place the vegan marshmallows on a lined cookie sheet and broil at 375°F for about 2 minutes until golden brown.
  3. Add the toasted marshmallows to the sugar mixture and stir until fully dissolved.
  4. Strain through a fine mesh strainer into another bowl to remove solids, then let cool.
  5. Once cooled, stir in vanilla extract and a pinch of salt before transferring to an airtight container.
