  • 2 pounds minced beef
  • 24 ounces tomato-based pasta sauce
  • 15 ounces ricotta cheese
  • 1 cup parmesan reggiano, shredded
  • 1 1/2 cups mozzarella cheese
  • 1 egg
  • Fresh parsley and basil
  • Salt and pepper, to taste

Instructions

  1. Slice the zucchinis into thin strips, about 1/4 inch thick.
  2. In a skillet over medium heat, cook the minced beef until browned. Season with salt and pepper.
  3. In a mixing bowl, combine ricotta cheese, egg, half of the parmesan cheese, salt, pepper, and chopped herbs. Mix well.
  4. In a baking dish, layer the ingredients: start with tomato sauce, then zucchini slices, half of the beef mixture, and half of the cheese mixture. Repeat until all ingredients are used. Top with remaining tomato sauce and cheeses.
  5. Preheat oven to 375°F (190°C) and bake for about 40 minutes until bubbly and golden brown. Let cool for 10 minutes before serving.
