  • 2 ripe avocados
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss cubed sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and add taco seasoning; simmer for 3-5 minutes.
  5. For guacamole, mash avocados with lime juice and chopped cilantro.
  6. Combine diced tomato, red onion, and cilantro for pico de gallo.
