  • 4 ears corn
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a bowl, mix cubed chicken with olive oil and spices until well-coated.
  2. Heat a skillet over medium-high heat and cook chicken for 5-7 minutes per side until golden brown; set aside.
  3. Cook corn by grilling, boiling, or roasting until tender; then cut kernels off the cob.
  4. Combine corn with mayonnaise, sour cream, cilantro, lime juice, and chili powder in a bowl.
  5. Rinse rice; cook with water and salt in a saucepan until fluffy.
  6. Assemble bowls with rice base, topped with chicken, street corn mixture, black beans, and diced avocado.
