  • 2 eggs
  • 1 avocado, sliced
  • 120g ground beef
  • 1 cup cherry tomatoes or 1 roma tomato, chopped
  • 2 tbsp grated manchego cheese
  • 1 tsp chili oil
  • 1 tsp everything bagel seasoning
  • 1 tsp Tajn seasoning (or chili-lime spice)
  • 1 tsp sriracha
  • Salt & pepper to taste
  • 1 tsp olive oil (for frying)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped tomatoes and sauté until softened. Stir in grated manchego cheese and season with salt and pepper to taste.
  2. In another skillet, heat olive oil over medium heat. Crack in each egg gently and cook sunny side up or over-easy based on preference. Drizzle chili oil over the eggs and sprinkle everything bagel seasoning on top.
  3. Assemble the bowl: layer cooked beef at the bottom, top with avocado slices sprinkled with Tajn seasoning, drizzle sriracha over the avocado, and place fried eggs on top. Serve immediately.
