  • 1 salmon fillet
  • 1 medium sweet potato
  • 1 cup broccoli florets
  • 1 tsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp black sesame seeds
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss sweet potato wedges with olive oil, paprika, salt, and pepper; spread evenly on a baking tray and roast for 25-30 minutes.
  3. Mix soy sauce, honey or maple syrup, sesame oil, and rice vinegar (if using) in a bowl. Brush the glaze over the salmon fillet on another tray; sprinkle black sesame seeds on top.
  4. Bake the salmon for 12-15 minutes until just cooked through.
  5. Steam broccoli florets until bright green and tender, about 4-5 minutes.
  6. Serve the salmon alongside sweet potato wedges and steamed broccoli.
