  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Crusty bread rolls for serving

Instructions

  1. In a Dutch oven over medium-high heat, heat olive oil and sear beef cubes until browned. Remove and set aside.
  2. Sauté onion, garlic, carrots, and celery in the same pot until softened.
  3. Stir in tomato paste; return seared beef to the pot with broth, thyme, salt, and pepper.
  4. Bring to a boil; reduce heat to low and simmer covered for about 2 hours until beef is tender.
  5. Prepare bread bowls by hollowing out crusty rolls; ladle stew inside and serve warm.
