  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper. Spread halved cherries on the sheet, sprinkle with sugar, and roast for about 10 minutes until soft. Allow cooling.
  2. Reduce oven temperature to 325°F. Spray an 8×8 inch baking pan with non-stick spray and line with parchment.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat sugar, eggs, and egg yolk on high until fluffy (about 5 minutes). Mix in melted butter, oil, and vanilla.
  5. Gently fold dry ingredients into the wet mixture until just combined. Add half of the roasted cherries and chocolate chips; fold gently.
  6. Pour batter into prepared pan and spread evenly. Bake for 40-50 minutes; edges should be set while center remains slightly soft.
  7. Cool completely before serving; top with remaining roasted cherries.
