  • Salt & freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 8 whole garlic cloves, peeled
  • Fresh rosemary (to taste)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Season the lamb generously with salt and pepper.
  3. Mix honey, soy sauce, minced garlic, and rosemary in a bowl.
  4. Optionally, sear the lamb in a skillet until browned before transferring to a roasting pan.
  5. Brush half of the glaze over the lamb and scatter whole garlic cloves around it.
  6. Roast for 2 to 2.5 hours or until internal temperature reaches 145°F (63°C), basting every 30 minutes.
  7. Let rest for at least 15 minutes before slicing.
