  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium-sized bowl, stir together the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves until well combined. Set aside.
  3. In another bowl, mix together the pumpkin puree, milk, melted butter (or vegetable oil), and vanilla until smooth. Pour this mixture into the bowl with the dry ingredients. Stir until you have a thick batter.
  4. Pour the batter into an 8-inch casserole dish with high sides. In a separate bowl, combine the granulated sugar, brown sugar, and chopped pecans. Spread this mixture evenly over the batter.
  5. Carefully pour hot water over the entire dish without stirring any of it. This step is crucial as it creates that wonderful caramel sauce beneath your cake.
  6. Place your casserole dish on a baking sheet (to catch any overflow) and bake for about 40 minutes or until the middle is set. Allow it to cool for 5-10 minutes before serving.
