  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 400ml vegetable stock
  • ¼ cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Boil diced pumpkin in water until tender (about 10 minutes). Drain.
  2. Cook gnocchi in boiling salted water until they float (2-3 minutes). Drain gently.
  3. In a large bowl, mix cooked pumpkin with vegetable stock, cream, blue cheese, and half of the mozzarella or cheddar. Fold in cooked gnocchi carefully.
  4. Preheat oven to 180°C (350°F). Transfer mixture to a baking dish, top with remaining cheese and pecans.
  5. Bake for about 20 minutes until golden brown. Add fresh sage leaves during the last few minutes for extra flavor.
