  • Mini pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. 1. Preheat your oven to 325°F (163°C). If using mini pumpkins, cut off the tops and scoop out the seeds.
  2. 2. In a mixing bowl, whisk egg yolks and granulated sugar until smooth. Gradually add heavy cream while whisking. Mix in vanilla extract, pumpkin puree, cinnamon, ginger, and salt until combined.
  3. 3. Pour the custard mixture into mini pumpkins or ramekins placed in a baking dish. Fill the dish with hot water halfway up the sides of your containers.
  4. 4. Bake for about 30 minutes until set but slightly jiggly in the center.
  5. 5. Cool at room temperature before transferring to the refrigerator for at least two hours.
  6. 6. Before serving, sprinkle sugar on top and caramelize it using a kitchen torch.
