  • 1 firm pear, peeled and cored
  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of 1 orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry, thawed
  • 1 beaten egg (for wash)
  • Pinch of flaky salt or chopped rosemary (optional)

Instructions

  1. In a small pot, combine apple vinegar, brown sugar, orange zest, and a cinnamon stick. Add the pear and simmer gently for 20-25 minutes until tender.
  2. Cool the pear in the poaching liquid for enhanced flavor. Slice the brie horizontally into two halves and place the poached pear upright on one half.
  3. Cover with the other half of brie and press gently to seal. Roll out puff pastry on a floured surface and wrap around the brie and pear combination.
  4. Seal edges underneath and place seam-side down on a parchment-lined baking sheet. Brush with beaten egg wash.
  5. Bake at 200°C (392°F) for 20-25 minutes until golden brown. Let rest for 5 minutes before slicing to serve warm.
