  • 1 teaspoon baking powder

  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add in the egg and vanilla extract, mixing well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually incorporate into the butter mixture until just combined.
  4. Press the dough evenly into the prepared pan and bake for 12–15 minutes until lightly golden. Allow it to cool completely.
  5. In a separate bowl, whisk instant pistachio pudding mix with milk and heavy cream; refrigerate for 5–10 minutes to thicken.
  6. Spread the thickened pudding over the cooled cookie base and garnish with chopped pistachios.
  7. Chill in the refrigerator for at least 2 hours before cutting into squares and serving.
