  • 4 chicken breasts (about 600g)
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp flour
  • 250ml chicken stock
  • 1 tsp dried thyme
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk

Instructions

  1. Boil cubed potatoes in salted water until tender; drain and mash with butter and milk until smooth.
  2. Season chicken with salt and pepper; heat olive oil in a skillet over medium-high heat. Sear chicken for about 6-7 minutes per side until golden brown.
  3. In the same skillet, sauté onions and bell peppers for about 5-7 minutes. Add mushrooms and garlic; cook for an additional minute.
  4. Sprinkle flour over veggies; stir and slowly add chicken stock while mixing. Simmer until thickened (5-8 minutes).
  5. Return chicken to skillet; coat well in gravy before serving with mashed potatoes.
