  • 4 lamb shanks (approx. 1.52 lbs total)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups beef stock (low sodium)
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Gather and chop all ingredients.
  2. In a Dutch oven over medium-high heat, add olive oil and sear each lamb shank until browned on all sides. Remove from pot.
  3. In the same pot, sauté onion, carrots, celery, and garlic until soft.
  4. Stir in tomato paste, then pour in apple vinegar and beef stock along with rosemary, thyme, salt, and pepper.
  5. Return lamb shanks to the pot ensuring they are submerged in liquid. Bring to a simmer and cover.
  6. Reduce heat to maintain a gentle simmer for about 2-3 hours until tender.
  7. Optional: For thicker gravy, mix flour with cold water to make a slurry and stir into the gravy during the last few minutes of cooking.
