  • 4 sea bass fillets (about 6 oz each)
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 4 tbsp unsalted butter
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 10 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Pat the sea bass fillets dry and season with salt and pepper.
  2. In a mixing bowl, combine minced garlic, lemon zest, lemon juice, and melted butter. Set aside.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the sea bass fillets for 2-3 minutes on each side until golden brown. Spoon the lemon-garlic mixture over the fish.
  4. Transfer the skillet to the oven and bake for about 8-10 minutes until cooked through.
  5. In another skillet, melt butter over medium heat, add onion and garlic, cooking until softened. Stir in spinach until wilted, then mix in heavy cream and Parmesan cheese until thickened.
  6. To serve, plate creamed spinach topped with the sea bass and garnish with fresh parsley.
