  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • Salt and pepper
  • 1 cup butternut squash, cubed
  • 1 tbsp olive oil
  • Pinch of cinnamon (optional)
  • Salt and pepper
  • 1 cup cooked white rice
  • 1 cup steamed broccoli florets
  • Fresh parsley (for garnish)
  • Lemon wedges

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, pepper, and optional cinnamon. Spread evenly on a baking sheet and roast for 25-30 minutes until golden brown.
  2. In a skillet over medium heat, add olive oil. Once hot, add cubed chicken and cook until golden brown on all sides. Stir in minced garlic, honey, soy sauce, paprika, salt, and pepper; simmer until fully cooked.
  3. Steam or blanch broccoli florets for about 3-4 minutes until bright green.
  4. Assemble bowls starting with rice as the base; top with roasted butternut squash, steamed broccoli, and glazed chicken. Garnish with parsley and serve with lemon wedges.
