  • 3 cups vegetable broth
  • 4 cups chopped broccoli

  • Salt & pepper to taste

  2. Add onion, carrot, and celery; cook until softened (about 10 minutes).

  4. Add flour and smoked paprika; stir for one minute.
  5. Pour in vegetable broth and add broccoli; bring to a simmer.
  6. Cook until broccoli is tender (8-9 minutes).
  7. Lower heat; stir in milk until warmed (do not boil).
  8. Mix in cheddar and cottage cheese until melted.
