  • 5 slices Turkey Bacon (chopped)
  • 2 tablespoons butter
  • 1 tablespoon fresh basil (roughly chopped)
  • 1 tablespoon fresh thyme (roughly chopped)
  • 1 tablespoon fresh oregano (roughly chopped)
  • 1 tablespoon fresh rosemary (roughly chopped)
  • 5 cloves garlic (minced)
  • 2 cups sliced carrots
  • 1 medium sweet yellow onion (diced)
  • 3 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 cups chicken broth
  • 1 can (28 oz) peeled, whole tomatoes
  • 1 tablespoon red apple vinegar
  • 8 oz Burrata cheese

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy (about 10 minutes). Add butter, fresh herbs, and minced garlic; stir for 2–3 minutes until fragrant.
  2. Add sliced carrots and diced onion; cook for another 10 minutes until softened.
  3. Mix in tomato paste; stir continuously for 2–3 minutes until it darkens.
  4. Stir in flour followed by chicken broth and canned tomatoes (smash them gently). Add red apple vinegar, bring to boil, then reduce heat and simmer for 30–45 minutes.
  5. Blend the soup until smooth in batches.
  6. Serve warm, adding burrata to each bowl.
