  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • Broth (enough to cover ingredients)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté onions until translucent (4-5 minutes), then add minced garlic and cook for an additional minute.
  3. Add sliced carrots and parsnips to the pot; cook for about 5 minutes until they slightly soften.
  4. Return browned beef to the pot and pour in broth to cover by an inch. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for at least 1.5 hours until beef is tender, stirring occasionally.
  6. Taste before serving and adjust seasoning if necessary.
