  • 6 tablespoons olive oil
  • 1 large onion, finely chopped
  • 5 large ripe tomatoes, finely chopped
  • 2 garlic cloves
  • 1 small green bell pepper, stem & seeds removed
  • 1 small zucchini
  • 4 large carrots, peeled
  • 1 small stick of celery
  • 2 tablespoons tomato paste
  • 12 sprigs fresh thyme

Instructions

  1. Heat olive oil in a cooking pot over medium heat. Add the onion and cook until caramelized.
  2. Add the chopped tomatoes and cook until softened.
  3. Cut remaining vegetables into chunks, add them to the pot, and cook for an additional 5 minutes.
  4. Stir in tomato paste and thyme, cooking for another 2 minutes before adding about 2 liters of water.
  5. Simmer partially covered for about 1 hour until flavors meld.
  6. Use an immersion blender to achieve a creamy consistency.
  7. Serve hot, topped with croutons or fresh herbs if desired.
