  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey to the skillet and cook until browned (5–6 minutes), breaking it up with a spoon.
  4. Stir in diced tomatoes, Italian herbs, salt, and black pepper. Simmer for 3–4 minutes.
  5. In the prepared baking dish, layer half of the zucchini slices followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers.
  6. Bake uncovered for 30–35 minutes until bubbly and golden on top. Let cool for about 5 minutes before serving.
