  • 1 tbsp olive oil (for chicken)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Marinate chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and pepper for 15 minutes.
  2. Preheat the grill or grill pan over medium heat. Grill the marinated chicken for 5-6 minutes on each side until cooked through. Allow resting before slicing.
  3. In a bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper to create the dressing.
  4. Combine diced avocado, halved cherry tomatoes, cilantro, and lettuce in a large bowl. Top with sliced grilled chicken and drizzle with dressing.
