  • 3 tsp. Baking Powder
  • 1 tsp. Xanthan Gum
  • 1 tsp. Pumpkin Pie Spice
  • Dash of Salt
  • 1 tsp. Cinnamon
  • ¼ tsp. Nutmeg
  • 2 Cups Powdered Sugar
  • 1 ½ tsp. Vanilla
  • ½ tsp. Cinnamon
  • ½ TBSP Coconut Milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together gluten-free flour, baking powder, xanthan gum, pumpkin pie spice, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with sugars, vanilla, pumpkin puree, and dairy-free milk until smooth.
  4. Combine wet ingredients with dry ingredients until just mixed; do not overmix.
  5. Fill a donut pan halfway with batter using a piping bag.
  6. Bake for about 20 minutes until a toothpick comes out clean. Cool on a wire rack.
  7. Prepare the maple glaze by whisking powdered sugar with coconut milk until smooth.
  8. Dip cooled donuts into the glaze or drizzle it on top before serving.
