  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1.5 pounds baby potatoes, halved
  • 1 teaspoon paprika
  • 1 pound green beans, trimmed
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Toss the chicken in this marinade and set aside.
  3. On a sheet pan, place halved baby potatoes and drizzle with olive oil; season with paprika, salt, and pepper.
  4. Roast the potatoes in the oven for about 20 minutes until they begin to soften.
  5. Add marinated chicken on top of the partially roasted potatoes.
  6. Toss trimmed green beans in olive oil with salt and pepper; scatter them around the chicken on the sheet pan.
  7. Roast everything together for another 20 minutes until the chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
  8. Let rest briefly before serving.
