  • 8 chicken drumsticks
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped
  • 6 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine chicken drumsticks with 3 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss until evenly coated.
  3. In another bowl, mix cubed potatoes, chopped carrots, and red bell pepper with the remaining olive oil and season with salt and pepper.
  4. Spread vegetables on a baking tray and nestle the chicken among them.
  5. Roast for 40-45 minutes until the chicken is golden brown (internal temperature should reach at least 75C/165F) and veggies are tender.
  6. Let rest for a few minutes before garnishing with fresh parsley and serving.
