Ingredients

  • 2 hard-boiled eggs
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved

  • Salt & freshly cracked black pepper to taste

  2. Cool under cold running water and slice in half.
  3. Slice cucumber into thin rounds and halve cherry tomatoes.
  4. Arrange cucumber slices around the edge of a shallow bowl and place halved tomatoes in the center.
  5. Top with sliced eggs, sprinkle with chives, and season with salt and pepper.
