  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion for about 5 minutes until translucent.
  2. Add ground turkey and cook until no longer pink, breaking it apart as it cooks (about 5 minutes).
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper until combined.
  4. Mix in drained red kidney beans, Rotel tomatoes with juices, and chicken broth. Bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 15-20 minutes, stirring occasionally.
  6. Season with salt and pepper to taste before serving hot with desired toppings.
