  • 6 tablespoons butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup condensed milk
  • 1 1/2 teaspoons vanilla extract
  • 2 cups chopped chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and toast the pecans on a baking sheet for 8–10 minutes until fragrant. Let cool.
  2. In a medium saucepan over medium heat, melt the butter. Add light brown sugar, granulated sugar, corn syrup, condensed milk, and vanilla extract. Stir and bring to a boil; let boil for about 5 minutes without stirring.
  3. On the parchment-lined baking sheet, create clusters of toasted pecans and spoon caramel over each cluster until well coated.
  4. Melt the chocolate in a microwave-safe bowl or double boiler and drizzle generously over each turtle cluster.
  5. Allow turtles to cool completely at room temperature before serving or packaging.
