  • 2 pounds ground beef (or ground chicken)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 2 tablespoons chili powder
  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 6 ounces cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 3 tablespoons salted butter
  • Chicken or beef broth

Instructions

  1. Chop the onions and poblano peppers; measure out the spices.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add browned meat, onions, poblanos, spices, tomatoes, hot sauce, butter, bay leaves, salt, and broth to the slow cooker.
  4. Cover and cook on low for about two hours; stir occasionally.
  5. Add cream cheese and shredded cheddar; stir until melted.
  6. Remove bay leaves before serving and top with fresh cilantro and green onions.
