  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the rotini in salted boiling water until al dente (8-10 minutes), reserving ½ cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken strips seasoned with Cajun seasoning and garlic powder until golden brown (7-9 minutes). Keep warm.
  3. In the same skillet, melt butter, sauté minced garlic, then stir in heavy cream and milk. Bring to a simmer.
  4. Gradually mix in Velveeta and mozzarella cheese until melted and smooth. Adjust consistency with reserved pasta water if needed.
  5. Toss cooked rotini in the sauce and simmer for another 10-12 minutes.
