  • 500g potato gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28oz can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 5oz fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Boil salted water in a large pot. Cook the gnocchi according to package directions until they float. Drain and set aside.
  2. In a skillet or Dutch oven, heat olive oil over medium heat. Sauté the onion until translucent (5-7 minutes).
  3. Add garlic and tomato paste; cook for about 2 minutes until fragrant.
  4. Stir in crushed tomatoes along with oregano, basil, salt, black pepper, and optional red pepper flakes. Simmer for at least 15 minutes.
  5. Remove from heat; mix in heavy cream and Parmesan cheese until smooth.
  6. Add fresh spinach; stir until wilted.
  7. Gently toss cooked gnocchi with the sauce until well coated.
