  • 1 lb boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • cup grated Parmesan cheese, for topping chicken
  • 3 cloves garlic, minced
  • teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • cup reserved pasta water, if needed

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through.
  3. Boil linguine until al dente; reserve some pasta water before draining.
  4. In the same skillet, melt remaining butter, add garlic, and sauté until fragrant.
  5. Stir in heavy cream and let it simmer before adding Velveeta cubes until melted.
  6. Mix in mozzarella and Parmesan cheese until thickened; adjust consistency with reserved pasta water if needed.
  7. Toss the drained linguine with the sauce and serve topped with seared chicken.
