  • 2 large boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 1 cup grated Parmesan cheese (for crusting)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • Chopped parsley or herbs for garnish

Instructions

  1. Cook the linguine in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper; coat with grated Parmesan.
  3. In a skillet, heat olive oil and 2 tbsp of butter over medium-high heat; sear the chicken until golden brown.
  4. Add garlic to the skillet during the last minute of cooking; remove chicken and set aside.
  5. In the same skillet, melt remaining butter and sauté garlic briefly.
  6. Stir in heavy cream and chicken broth; simmer while whisking.
  7. Add cream cheese until melted; gradually whisk in mozzarella, cheddar, and Parmesan until smooth.
  8. Season the sauce with Italian seasoning, basil, salt, and pepper.
  9. Toss cooked linguine in the sauce until well coated.
  10. Serve topped with sliced chicken strips and fresh herbs.
