  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted if desired)
  • Optional: ½ cup brown sugar, 1 tsp ground cinnamon, ½ cup chopped pecans for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two loaf pans or a bundt pan.
  2. In a large bowl, whisk together vegetable oil (or melted butter), granulated sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, mix all-purpose flour, ground cinnamon, baking powder, baking soda, and salt until well combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined, then stir in the chopped pecans.
  5. Pour the batter into prepared pans and optionally sprinkle with a topping of brown sugar and additional cinnamon mixed with pecans.
  6. Bake for 45-55 minutes for loaf pans or 55-65 minutes for a bundt pan. Check with a toothpick for doneness.
  7. Cool in pans for about 10-15 minutes before transferring to a wire rack to cool completely.
