  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream butter and sugar in a mixer until smooth; add vanilla and eggs one at a time.
  4. Gradually mix in dry ingredients alternately with milk until just combined.
  5. In another bowl, toss chopped apples with brown sugar and cinnamon.
  6. Layer half of the batter in the pan, top with half of the apple mixture; swirl gently.
  7. Add remaining batter and apples on top; sprinkle with topping mixture.
  8. Bake for 45-55 minutes until a toothpick comes out clean.
  9. Cool slightly before drizzling with glaze made from confectioners’ sugar, cinnamon, and water.
