  • 2 Chicken breasts
  • 1 cup Fresh parsley, chopped
  • 4 cloves Garlic, minced
  • ¼ cup Red apple vinegar
  • ½ cup Olive oil
  • ½ teaspoon Red pepper flakes
  • 1 cup Mayonnaise
  • ½ cup Sour cream or Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 cup Diced tomatoes
  • 2 cups Fresh greens (spinach or arugula)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by whisking together olive oil, minced garlic, chopped parsley, red apple vinegar, salt, and pepper in a mixing bowl. Let the chicken soak for at least 30 minutes.
  2. Prepare the chimichurri sauce by blending parsley, garlic, red pepper flakes, vinegar, olive oil, and salt until chunky.
  3. In another bowl, mix mayonnaise, sour cream (or yogurt), lemon juice, minced garlic, and salt for the garlic sauce; chill in the fridge.
  4. Preheat your grill or grill pan over medium-high heat. Grill marinated chicken for about 5–7 minutes per side until fully cooked. Allow to rest before slicing.
  5. Assemble your bowl with fresh greens at the bottom, topped with sliced grilled chicken and chimichurri sauce. Add diced tomatoes and a scoop of garlic sauce.
