  • 1 yellow onion, sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or Tajin
  • 2 teaspoons cumin
  • Kosher salt and black pepper
  • 3 cloves garlic, chopped
  • 34 cups cooked rice
  • 3 cups grilled corn kernels
  • Fresh toppings: shredded lettuce, mashed avocado, jalapeños, cilantro
  • 1/3 cup extra virgin olive oil (for vinaigrette)
  • 1/3 cup salsa verde (for vinaigrette)
  • 1/4 cup lime juice (for vinaigrette)
  • 2 teaspoons spicy honey (for vinaigrette)
  • 1/3 cup cilantro, chopped (for vinaigrette)

Instructions

  1. In a skillet, heat olive oil over high heat. Add sliced chicken seasoned with smoked paprika, chili powder, cumin, salt, and pepper. Cook for 8-10 minutes until fully cooked. Add garlic in the last minute.
  2. In the same skillet, sauté onions until fragrant (about 5 minutes), then add bell peppers and cook until tender (another 5 minutes).
  3. Combine the cooked chicken with the vegetables in the skillet.
  4. Mix vinaigrette ingredients in a glass jar: olive oil, salsa verde, lime juice, spicy honey, chopped cilantro.
  5. Assemble bowls by layering cooked rice topped with the chicken mixture and grilled corn. Finish with fresh toppings like shredded lettuce, avocado slices, jalapeños, cotija cheese, and drizzle vinaigrette over.
