  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup whole milk
  • Chopped parsley (for garnish, optional)

Instructions

  1. Cook the rotini in boiling salted water until al dente, about 8-10 minutes. Reserve some pasta water, drain, and set aside.
  2. Season chicken pieces with Cajun seasoning and spices.
  3. In a skillet, heat olive oil and butter over medium-high heat; sear seasoned chicken until golden brown and cooked through. Remove from skillet.
  4. Sauté minced garlic in the same skillet for 30 seconds, then add heavy cream and milk.
  5. Stir in Velveeta until melted; add mozzarella and Parmesan until creamy. Adjust consistency with reserved pasta water if needed.
  6. Toss cooked rotini in the cheese sauce; serve with chicken on top.
