  • 12 eggs
  • 1 stalk of celery
  • 1 green onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs in an egg cooker or pot for about 11 minutes; then cool in cold water.
  2. Once cooled, peel and halve the eggs. Remove yolks to a mixing bowl.
  3. Finely chop the celery and green onion; add to the yolks along with mayonnaise, Creole mustard, Cajun seasoning, and hot sauce.
  4. Mash until smooth, adjusting seasoning as necessary.
  5. Fill egg white halves with the mixture using a spoon or piping bag.
