- 1 stalk of celery
- 1 green onion
- 4 tablespoons mayonnaise
- 2 tablespoons Creole mustard
- ¼ teaspoon Cajun seasoning
- 1 teaspoon hot sauce
- Boil the eggs in an egg cooker or pot for about 11 minutes; then cool in cold water.
- Once cooled, peel and halve the eggs. Remove yolks to a mixing bowl.
- Finely chop the celery and green onion; add to the yolks along with mayonnaise, Creole mustard, Cajun seasoning, and hot sauce.
- Mash until smooth, adjusting seasoning as necessary.
- Fill egg white halves with the mixture using a spoon or piping bag.
