  • 2 cups bread flour
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 Tbsp olive oil
  • 1/2 tsp squid ink
  • 1 cup warm water
  • 4 oz button mushrooms
  • 1/2 cup shallots (or red onion)
  • 45 cloves garlic
  • 2 Tbsp cooking apple juice
  • 1 cup jarred pesto sauce

Instructions

  1. In a mixing bowl, combine bread flour, garlic powder, salt, and active dry yeast. Add olive oil and squid ink to the dry mixture. Gradually stir in warm water until a dough forms.
  2. Knead on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover, and let it rise in a warm spot until doubled in size, about 1 hour.
  3. Clean button mushrooms and remove stems gently. Heat butter in a skillet over medium heat; sauté shallots until soft, add garlic until fragrant. Stir in apple juice and season with thyme, salt, and pepper.
  4. Preheat oven to 475°F (245°C). Punch down the dough and divide it into four parts; roll each portion into flat circles.
  5. Spread pesto sauce on each flatbread, top with mushroom mixture and cheese if desired. Bake on baking sheets for 10-12 minutes until golden brown.
