  • 3/4 cup butter (softened)
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cups flour
  • 1 1/3 cups quick oats (uncooked)
  • 8 ounces cream cheese
  • 1 14 ounce can sweetened condensed milk
  • 1 teaspoon vanilla
  • 1 egg yolk
  • 1 cup blueberries (or raspberries)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13 inch baking pan by lining it with parchment paper or greasing it.
  2. For the crust, mix softened butter, sugar, brown sugar, baking soda, salt, flour, and quick oats until combined. Press half of this mixture into the bottom of the pan and bake for 13 minutes until lightly golden.
  3. While the crust bakes, prepare the filling by whisking cream cheese until smooth. Gradually add sweetened condensed milk, vanilla extract, and egg yolk until fully incorporated.
  4. Once baked, pour the cream cheese mixture over the crust and top with blueberries. Sprinkle remaining oat mixture on top and press down gently.
  5. Return to the oven and bake for an additional 20-25 minutes until edges are golden brown.
  6. Cool completely before cutting into squares.
