  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar for cream cheese mixture

Instructions

  1. Preheat the oven to 375°F and place paper baking cups in a muffin pan.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, sugars, eggs, oil, and vanilla until smooth. Gradually fold in dry ingredients until just combined.
  4. In another bowl, beat cream cheese with sugar and egg yolk until smooth.
  5. Fill muffin tins three-fourths full with batter; add one tablespoon of cream cheese mixture on top and swirl gently with a toothpick.
  6. Bake for 18-20 minutes until a toothpick inserted comes out clean. Cool before serving.
