  • 56 medium sweet potatoes (peeled & sliced)
  • ¾ cup unsalted butter
  • ¾ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice sweet potatoes into thin medallions and layer them in a baking dish.
  3. In a saucepan, melt butter and mix with brown sugar, water, spices, and salt until combined.
  4. Brush half of the sauce over the sweet potatoes.
  5. Cover with foil and bake for 45-50 minutes.
  6. Remove foil, drizzle remaining sauce over the top, then sprinkle with pecans and marshmallows.
  7. Broil for 1-2 minutes until marshmallows are toasted.
  8. Let cool for 10-15 minutes before serving.
