  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup light brown sugar
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 11/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, brown sugar, vegetable oil, and vanilla until smooth.
  3. In a separate bowl, mix flour, baking soda, pumpkin pie spice, and salt.
  4. Gently fold dry ingredients into the wet mixture until just combined. Fold in chocolate chips.
  5. Pour batter into the prepared pan and smooth the top. Optionally sprinkle more chocolate chips on top.
  6. Bake for 55–60 minutes or until a toothpick comes out clean from the center.
  7. Allow to cool completely before slicing.
